Hash is one of the many dishes that are extremely popular in America and are now slowly making their way across the Atlantic.

Coming from the French ‘Hacher’, meaning to chop, it’s a dish that usually involves some form of chopped meat, and is a great way to take unloved leftovers and transform them into something fresh and delicious.

In this week’s Friday Food Club, the team at Ludo’s Primal Wellness has put together a recipe for a sweet potato chorizo hash with eggs and avocado crema – a Mexican-style cream that’s great for dolloping over spicy dishes.

In the States, hash is often considered a breakfast dish, the kind that can be found in a classic American diner. Our recipe, on the other hand, can be enjoyed any time of day, and has a distinctly Latin American feel. We hope you enjoy.

From pantry to plate: 35 minutes


  • 1 large white onion (diced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 500g tin of diced green chilies
  • 250g of chorizo
  • 800g of diced sweet potatoes
  • 4 to 5 large eggs

    Step by step guide

  • Heat a large cast iron skillet over high heat with 2 tablespoons oil. Add the onions and spices and sauté until translucent and soft, about 5 minutes.
  • Add green chilies and chorizo to the pan and stir to combine. Let the chorizo brown, about 4-5 minutes.
  • Reduce heat to medium and add in the sweet potato and stir to combine. Pour in 1/4 cup of water and cover to steam the potatoes. This will take about 10 minutes. Uncover and stir every few minutes to loosen up the bits on the bottom.
  • Make the crema by blending the ingredients together. If it’s a bit thick add in water a tablespoon at a time until it reaches your desired consistency.
  • Once the potatoes are soft make little divots in the hash and crack in the eggs. Cover and cook another 3-5 minutes until the whites are set but the yolks are still runny.
  • Add desired toppings and serve.
